The study of volatile aromatic compounds identified many differences according to geographical origin and variety. Therefore, this methodology is important in verifying the typicality of the products. It is also useful in identifying the chemical components responsible for the different aromas on a sensory level. The phenolic acid and alkaloid composition, even though variable within each trial, may also contribute in the characterisation of plant samples
