For the determination of the specific energy for the cutting of pineapple stem and leaves, a type of pendulum was built, for the cutting at different speeds with a 30º angle blade and with the cutting taking place at 90º with the blade movement. The energy required for the cutting was determined using the work and energy principle. The specific cutting energy for pineapple leaves was found between 55,5 and 77,0 mJ/mm2 using speeds between 14,2 and 15,4 m/s and with an humidity between 78,3 and 79,1 %, with the highest values of energy corresponding to the lowest speeds of the blade. The specific cutting energy for the stem was found to be 20,7 mJ/mm2 with a speed of 13,8 m/s and humidity of 68,7 %.
