The aim of this work is to identify a Biointegral farming model with organic certification and biodiversity friend in order to make the entire agricultural and oenological production process traceable and usable. To this end, different technologies are used (amphora, cement) suitable for producing quality wines from native plants, trying to minimize the handling of the raw material to preserve the naturalness of the finished product, without compromising its quality. Biointegral wines vinified in amphora (traced Tuscany for construction materials) have been characterized, both underground and external, used both during fermentation and aging. "Secondary" products have also been developed for food and/or cosmetic use deriving from the reuse of by-products of the supply chain, such as dried grape peels and grape seeds, as a new source of biomolecules from waste matrices, respecting the fundamental principles of biodiversity and multifunctionality of the company.
