The thesis aims at exploring how sensory alterations, experienced by cancer patients during cancer treatment, might impact food preferences. Multiple variables impacting fodd preferences are included in the study for a more inclusive analysis of the phenomenon. Besides, food products tailored to cancer patients needs, during cancer treatment, have been developed using a co-creation approach to increase liking and reduce food waste in hospital food service.
