The Influence of Environmental, Agronomical, and Technological Sources of Variation on the Quality of Oils Obtained from Olives Harvested and Processed in Tuscany. 43 chemical and 15 sensory descriptors of 996 samples are discussed. The samples were classified by zone, harvesting period, harvesting year and processing method. For every descriptor the influence of these sources of variation was evaluated by ANOVA models, linear regrassion models and Homogeneity-of-slopes models.
