This paper deals with the application of binary response choice models to study four food products of the Val d'Orcia area. It aims at addressing two main issues: i) the analysis of food products of high quality by planning a combined study of choice and conjoint designs in the presence of certication criteria and quality characteristics; (ii) the application and the comparison of the conditional logit, the mixed logit and the heteroschedastic extreme value models, in order to study the consumer preferences taking into consideration both the heterogeneity of respondents and the heteroschedasticity of the error term.
