A Direct Analysis in Real Time (DART) ambient ionization source was coupled to a high resolution accurate mass (HRAM) quadrupole mass spectrometer for targeted MS/MS analysis of 4-EP and 4-EG directly from wine samples. The targeted MS/MS experiment yielded detection limits in the very low ppb range by combining sample concentration with sorptive stir bars (PDMS Twister). This method is ultra-fast and direct to quantitatively monitor phenolic off-flavor compounds in wine to prevent product spoilage during aging.
