It is undisputed that the cold chain compliance is fundamental for the food production hygiene, and besides the routine use of automatic temperature-monitoring systems designed to this aim, there is also a deal of attention to the development of advanced methods of cold chain monitoring and management .In this respect here is proposed an inexpensive biological control approach, based on the simple assumption that when the cold chain properly works, the outside temperature should not influence the temperature of the stored food and consequently the rate of bacterial multiplication.
