Twenty subjects, with a average age of 39.5 years, participated in the study. Participants adhered to a diet containing 70 g/day of pasta made Senatore Cappelli (Test Period) for 10 weeks, followed by another type of pasta of the same quantity (Placebo Period) for the same period. Lipid profiles (total cholesterol, HDL-cholesterol, LDL-cholesterol and triglycerides) and haemorheological profiles [whole blood viscosity (WBV), plasma viscosity (PLV), erythrocytes’ filtration rate (EF)] both before and after dietary interventions were evaluated. The dietary intake of pasta obtained from Senatore Cappelli induced favourable biochemical changes by lowering the circulating levels of markers for atherosclerosis, (lipid parameters and haemorheological variables).
