The contribution presents the first results of an empirical survey carried out in the historic center of Florence and aimed at mapping and analyzing the increase in the commercial offer operating in the catering sector both from a quantitative and qualitative point of view. The study builds on the idea that Florence is undergoing a process of functional specialization of its historic center into a foodscape, in which the selling and the consumption of food is becoming the main focus of commercial activities. The paper starts with the review of the international literature on the subject, continues then with the empirical results of the research and concludes with some reflections on the main implications of the investigated processes on the policy front.
