The emergence of short food supply chains (SFSCs) is a very evident phenomenon in recent developments in the food systems, drawing the attention of many categories of stakeholders, among which producers, consumers, and public institutions. Indeed, consumers wish to access local, fresh, and quality food, farmers seek alternative ways to reach the market and increase their profitability, and public institutions look at SFSCs as a tool to support the sustainability transition of agrifood systems. This chapter first explores the many definitions of SFSCs, discussing the key concepts underpinning them. Then, it outlines the variety of existing models along with their classification based on their main characteristics and stakeholders’ role. In the final part, the functions, goals, and potential economic, social, and environmental impacts of SFSCs are examined, as well as methods for assessing them.
