In recent years outdoor system for pig production, pasture in wood particularly, has been proposed again in consequence of several reasons: availability of land characterized by low profitability, increasing of consumer’s requirements of typical products, safeguard of autochthonous endangered breeds. Pasture in wood for pig production must be done with rational criteria to avoid deterioration of environment and soil. The ancient experience of rearing in wood could be applied nowadays but they must take the modern knowledge on animal behavior and physiology into account; at the same time the new social and economic conditions of rural system should be considered. The raw and cured products that come from pigs reared outdoor are characterized by typical dietetic and organoleptic traits which are, although the high prices, much appreciate by consumers. If managed in rational way, outdoor system increases the economic and cultural value of marginalized areas trough the recover of traditions which otherwise could be loss for ever.

Abstract
