The lipid mobilization for development and gonadal maturation depends on the fish species and may be obtained from the fat reserves of one or more tissues, particularly muscle and liver. The polar lipids are inversely proportional to the neutral lipids, totaling 5 to 50% of total lipids. In the polar lipids fraction, phospholipids represent the largest quantity and are related to the structure of cell membranes, cell liposomes, lipoproteins and other fatty microparticles. The aim of this study was to evaluate and compare the fatty acid profiles of the polar lipid fraction of wild and cultivated lambari tissue (muscle, liver and ovaries).

Abstract
