Compare the mechanical separation process with the manual mincing applied on farmed European se abass, gilthead sea bream, rainbow trout, and wild Atlantic horse mackerel by evaluationg technological yield and nutritional quality of the obtained meat. Results reveal that mechanically separation process can be adopted for fish however, not all the species considered in this trial showed to be equally prone. Globally, sea bass and rainbow trout seemed to be the most suitable froma technological perpective being almost unaffected by the process.
