In this chapter we will underline the most significant results on the three classes of plant peroxidases that were crucial to gaining a more complete understanding of their structure–function relationships. In particular, examples will be chosen to demonstrate how resonance Raman (RR) spectroscopy can be extremely useful in elucidating subtle structural features important for protein stability and function.
